Foraging with Chef Christiaan Campbell at Boschendal
At the beginning of Spring, I had the fantastic opportunity to photograph Chef Christiaan Campbell and his sensational creations at Boschendal outside Franschhoek. One of the absolute highlights was joining him and his team to forage for mushrooms and greens for one of his dishes. This was veld to fork indeed, as we rummaged around on the property’s extensive clusters of mushy forest floors, hunting for the essential bits for a dinner party later that evening.
It feels like such an adventure of discovery to forage, a secret almost, and yet this way of finding food is not new to us as humans. This is how we should be taking our relationship with the Earth back to its harmonious blueprint. Seek and ye shall find… ask and ye shall receive. Make sure you have a knowledgeable guide if you decide to take up foraging yourself.
